At Lincolnshire Poacher Cheese, they are absolutely committed to producing the very best cheese that they possibly can (with a little help from their 230 Holstein Fresian Cows!) using their own fresh unpasteurised milk and traditional methods. They have to show lots of patience as the cheese they  are making today will probably not be sold for another 18 months!
